Day 304: Catching Up

Eric and I both had some school work to take care of today.  I have been putting off my independent studies midterm for months, and he's just a little behind on his classwork.  When I got out of school this afternoon I went over to take a two hour test - 50 multiple choice and 4 essay questions.  Eric had a bit of boring text book reading and some online assignments.  Oh, the never ending life of college.  Now enjoy some pictures of the cats!  It seems that we may not take interesting photos of ourselves every day, but we are always taking pictures of the cats!

Day 181: Nerf Wars

Last weekend we got a pair of Maverick Nerf Guns in a White Elephant gift exchange.  Now the cats are learning to dodge darts and I am being ambushed while working on homework!  Speaking of homework, I forgot to mention on Tuesday that Eric is totally done with his fall semester.  He only has 4 more credit hours before he graduates!  Talk about an easy spring semester!  I finished my two classes tonight.  I could have finished my Master's between the spring and summer semesters, but my sanity is worth more than a degree, so I'll only take one class in the spring.

Day 75: Casserole and Homework

Tonight we made our half version of the famous Mexican Chicken Casserole.  This was a welcome break to my unreal amount of homework, that I obviously put off until the last minute.  I had to read 47 pages about the purpose of inclusion of students with severe disabilities.  Luckily it was a quite enlightening read - I can't imagine what I would have done if it was 47 pages of boring blah-blah-blah.

For those who are interested, here is the recipe for Mexican Chicken Casserole...

1 bag of yellow corn chips, crushed
1lb of chicken breasts, cooked and shredded
2 cans of Rotel tomatoes - mild, regular, or spicy; drained, partially drained, or not at all
2 cans cream of chicken
2 cans cream of mushroom
1 bag of shredded mexican style cheese

Preheat the oven to 350-375
Mix the chips, chicken, and cans in a large bowl
Spread the mixture in a greased 8x13 pan
Sprinkle cheese on top and bake for 30-45 minutes
Serve with rice!

For a smaller portion, use half of the recipe and an 8x8 pan.

Day 68: School and Homework

Uh oh, you guys are gonna get used to this. Eric reporting again. Today was pretty close to Tuesday for me. In gaming class we went through a chapter and made up our own trivial pursuit questions. I accidentally left my book in my car down in the parking garage, but luckily we had a synopsis of the chapter available on the online class website. At the end of class we played a couple rounds of team deathmatch in which I topped my team. After class I went to Jess' parents house for another ride, and once again went solo. This time I left from the house and rode from Blackbob to 119th to Mur-Len to 151st. I stopped by my parent's house again, and then went back to the house. The last half of my ride was during sunset into night for the first time. This one was pure enjoyment for me. I didn't have to think about shifting or signaling or lane change or anything. It all just flowed. I think at this rate I'll be ready for Bikers for Babies or Cassody or whatever event we can make this fall.

Jess here, tonight I spent ALL NIGHT working on homework.  I learned that I need to start my online class a little sooner so I've got time to finish it all.  But I'm really excited about my classes this semester.  My online class is about teaching math, science, and social studies to children with significant disabilities.  My Monday night class is about evaluating students who use alternate forms of communication.  I'm taking a third class as an independent study, it is about behavior support and classroom management.  Oy, time for bed!
